Pumpkin Seed Goodness

Come this Friday most people will have carved pumpkins at their door to greet trick or treaters . This means they'll also have pumpkin seeds! Rather than tossing them out in the green bin with the pumpkin goo, here's a simple recipe that makes use of the seeds for a yummy healthy snack:

Roasted Pumpkin Seeds

    • 1 to 2 cups cups pumpkin seeds, cleaned and rinsed
    • 2 teaspoons garlic powder
    • 2 teaspoon salt 
    • 1 tbsp olive oil
    • 1/2 teaspoon black pepper
    1. Preheat the oven to 350
    2. Spray a baking sheet with cooking spray
    3. Toss all ingreidents in a bowl and spread on a baking sheet in an even layer.
    4. Bake for about 15 minutes, until seeds are crispy and golden brown
    5. Remove from the oven and let cool before serving
    6. Roasted seeds will keep in a container for up to one week
