Come this Friday most people will have carved pumpkins at their door to greet trick or treaters . This means they'll also have pumpkin seeds! Rather than tossing them out in the green bin with the pumpkin goo, here's a simple recipe that makes use of the seeds for a yummy healthy snack:
Roasted Pumpkin Seeds
- 1 to 2 cups cups pumpkin seeds, cleaned and rinsed
- 2 teaspoons garlic powder
- 2 teaspoon salt
- 1 tbsp olive oil
- 1/2 teaspoon black pepper
- Preheat the oven to 350
- Spray a baking sheet with cooking spray
- Toss all ingreidents in a bowl and spread on a baking sheet in an even layer.
- Bake for about 15 minutes, until seeds are crispy and golden brown
- Remove from the oven and let cool before serving
- Roasted seeds will keep in a container for up to one week
